No obstant aix\u00f2, la moda de les dietes <em>gluten free<\/em> i els mites mal entesos tan estesos han posat en dubte el valor saludable d&#8217;aquest cereal. Per\u00f2 no eleva el colesterol de per si, ni cont\u00e9 greix poc saludable, ni produeix diabetis.<\/p>\n<p>Eliminar el blat de la dieta, si no s&#8217;\u00e9s intolerant el gluten, \u00e9s un error que no hem de cometre. La pasta \u00e9s una font de carbohidrats excel\u00b7lent, nutrients necessaris per al bon funcionament de l&#8217;organisme; que preparada al dente, a m\u00e9s, redueix el seu \u00edndex gluc\u00e8mic, \u00e9s a dir, no produeix una pujada brusca de sucre en sang. El que interessa \u00e9s augmentar la despesa energ\u00e8tica i reduir la quantitat de greix consumit, que m\u00e9s que per la mateixa pasta ve condicionada pels ingredients amb la qual l&#8217;acompanyem.<\/p>\n<p>A m\u00e9s de les pastes elaborades amb farina de blat, en la gastronomia trobem un altre gran ventall de varietats, tantes com cereals. La d&#8217;arr\u00f2s, per exemple, molt comuna en cuines de l\u2019\u00c0sia i l&#8217;\u00cdndia, t\u00e9 major aportaci\u00f3 cal\u00f2rica que la de blat, m\u00e9s hidrats, m\u00e9s greixos, menys prote\u00efna i menys fibra. No obstant aix\u00f2, est\u00e0 lliure de gluten, la qual cosa en permet el consum en casos de celiaquia. Igualment el permeten les farines de blat de moro o patata, tamb\u00e9 m\u00e9s cal\u00f2riques que la de blat.<\/p>\n<p>Una veritat a tenir en compte, per exemple, \u00e9s que les farines produ\u00efdes amb el gra sencer del cereal, anomenades integrals, presenten majors propietats nutricionals en comparaci\u00f3 amb les refinades.
