Oblida&#8217;t de la cansalada i les t\u00edpiques carns i atreveix-te amb nous gustos. Sorprendr\u00e0s nom\u00e9s invertint una mica de temps previ a les brases i far\u00e0s que tots t&#8217;acabin demanant les receptes.<\/p>\n<h5><span style=\"color: #ff0000;\"><b>Una mica de gr\u00e0cia a les carns, \u00a1a marinar!<\/b><\/span><\/h5>\n<p>Ja sabem que una bona carn no necessita gaire disfressa perqu\u00e8 la barbacoa aconsegueixi treure-li el m\u00e0xim partit. Afegir una mica de roman\u00ed i farigola a les brases donar\u00e0\u00a0un punt arom\u00e0tic extra, per\u00f2 el que et proposem va un pas m\u00e9s enll\u00e0: preparar un marinat. No nom\u00e9s aportar\u00e0 nous aromes i sabors sin\u00f3 que tamb\u00e9 far\u00e0 que la carn sigui especialment tendra i sucosa. Et recomanem dos marinats molt senzills i mediterranis perqu\u00e8 t&#8217;hi inici\u00efs.\u00a0El primer, a base de tres cullerades soperes de mel, la mateixa quantitat de vinagre i un pessic de pebre negre. El segon, a base d&#8217;una cullerada sopera d&#8217;orenga, un all aixafat, un got d&#8217;oli d&#8217;oliva verge extra i un pessic de pebre negre. Guia&#8217;t amb aquestes quantitats i prepara el marinat de manera proporcional segons demani la quantitat de carn que estiguis a punt de preparar. El procediment \u00e9s molt f\u00e0cil. Barreja b\u00e9 tots els ingredients, pinta la carn i deixa-la reposar\u00a0dins la mescla almenys quatre hores. Si \u00e9s m\u00e9s temps no passa res, ho pots deixar llest incl\u00fas el dia abans. Quan la barbacoa estigui a punt, a cuina com qualsevol carn! Pots utilitzar el primer marinat per al pollastre, per exemple, i preparar-lo en forma de broqueta. El segon, anir\u00e0 perfecte per a carns vermelles.<\/p>\n<h5><b><span style=\"color: #ff0000;\">El secret \u00e9s a la salsa<br \/><\/span><\/b><\/h5>\n<p>Una altra manera de donar una volta a la cl\u00e0ssica barbacoa \u00e9s preparar algunes salses perqu\u00e8 els convidats descobreixin i combinin al seu gust. Un infal\u00b7lible en aquests casos \u00e9s el cl\u00e0ssic\u00a0chimichurri, i \u00e9s que no cal posar en dubte que els argentins hi entenen for\u00e7a de carns i rostits! Tot i aix\u00ed, qu\u00e8 tal si ho versionem? Et proposem el seg\u00fcents: sis cullerades de cilantre fresc picat, tres alls, mitja ceba, una cullerada d&#8217;orenga, un got d&#8217;oli d&#8217;oliva verge extra, un got de vinagre i un pessic de sal. Tot ben picadet i barrejat amb l&#8217;oli i el vinagre pr\u00e8viament emulsionat. Una altra salsa perfecta per a carns a la brasa, aquesta vegada d&#8217;influ\u00e8ncia turca i libanesa, \u00e9s la\u00a0muhammara de pebrots i nous. M\u00e9s densa que l&#8217;anterior, es preparar amb\u00a0300\u00a0g de pebrots vermells rostits, una dent d&#8217;all, una cullerada sopera de pa ratllat, 100 g de nous, 100 ml d&#8217;oli d&#8217;oliva verge extra, una culleradeta de com\u00ed, mitja de pebre dol\u00e7 i mitja de sal. Ho posem tot al got, ho batem fins que quedi homogeni i llest! Si daurem uns minuts les nous abans de triturar-les li donaran un toc diferent. Ah! I, a m\u00e9s de carns, aquesta salsa tamb\u00e9 acompanya molt b\u00e9 crudit\u00e9s de pastanaga, api o cogombre.
