Per aix\u00f2 cada cop estem m\u00e9s preocupats per saber les caracter\u00edstiques dels aliments que consumim. Volem saber el valor nutritiu i energ\u00e8tic del que mengem. Per\u00f2 sovint ens oblidem que escollir productes de qualitat, frescos i variats \u00e9s tan important com saber cuinar-los.<\/p>\n<p>Els experts diuen que fins que comprem els productes s\u2019han conservat, en la mesura del possible, m\u00e9s nutrients que des que els posem a la nevera fins que els consumim. Normalment l\u2019espifiem rentant, remullant, tallant i coent massa i massa estona.<\/p>\n<p>En aquest sentit, un estudi de la Universitat de M\u00farcia publicat en el Journal of Food Science va analitzar la p\u00e8rdua de vitamines i antioxidants en vint tipus de verdures i hortalisses despr\u00e9s de sotmetre-les als sis procediments de cocci\u00f3 m\u00e9s habituals. Si a m\u00e9s el posem directament sobre els aliments en lloc de sobre la planxa o la paella, evitarem que s\u2019oxidin. Perqu\u00e8 els aliments no perdin nutrients al forn, les temperatures han de ser elevades i els temps curts. Aquest tipus de cocci\u00f3 \u00e9s la m\u00e9s adequada per a les carns en general i es poden acompanyar de verdures i un rajolinet d\u2019oli. \u00c9s molt c\u00f2mode, r\u00e0pid i sa.<\/p>\n<p>El saltejat es caracteritza per ser una cocci\u00f3 r\u00e0pida d\u2019aliments trossejats en petites proporcions en qu\u00e8 hi afegim una mica d\u2019oli, preferiblement d\u2019oliva, tant per la seva resist\u00e8ncia a la calor com per les seves propietats nutritives. Podem utilitzar el wok, la paella profunda i ovalada t\u00edpica de les cuines orientals, i la imaginaci\u00f3: podem barrejar verdures o carn, peix, llegum, arr\u00f2s, pasta&#8230;<\/p>\n<p>Al contrari del que se sol pensar, fregir no t\u00e9 per qu\u00e8 ser ins\u00e0 o aportar moltescalories si la temperatura i l\u2019oli s\u00f3n adequats. Aquesta t\u00e8cnica conserva molt b\u00e9\u00a0les propietats dels aliments perqu\u00e8 els embolica en un crosta i mant\u00e9 l\u2019aigua\u00a0dins.
