Hi ha un seguit d\u2019aspectes que cal tenir en compte si volem fer una pasta al seu punt, al dente i al m\u00e9s pur estil itali\u00e0.<\/p>\n<p><span style=\"color: #ff0000;\"><strong>1. Respecta el temps de cocci\u00f3<\/strong><strong>. <\/strong><\/span>Sovint ens enganyem i creiem que podem calcular a ull l\u2019estona que hem de coure la pasta. Cras error. \u00c9s fonamental respectar escrupolosament, amb el rellotge a la m\u00e0, els minuts que assenyala el paquet, perqu\u00e8 tan terrible \u00e9s que ens quedi crua com passar-nos amb el foc. Quan la pasta es cou en exc\u00e9s comen\u00e7a a deixar anar el mid\u00f3, que \u00e9s el que ens engreixa, ja que es dona un pic de sucre que a l\u2019instant es converteix en greix.<\/p>\n<p><span style=\"color: #ff0000;\"><strong>2. No posis oli a l\u2019aigua<\/strong><strong>. <\/strong><\/span>Aquest vell costum tan est\u00e8s en moltes llars no t\u00e9 sentit: amb 1 litre d\u2019aigua per cada 100\u00a0g de pasta n\u2019hi ha prou, aix\u00f2 \u00e9s tot. La creen\u00e7a que l\u2019oli aportar\u00e0 un punt de sabor a la pasta i que evitar\u00e0, a m\u00e9s, que aquesta s\u2019enganxi \u00e9s del tot falsa. De malgastar oli, ni parlar-ne, deixem-lo per a altres necessitats.<\/p>\n<p><span style=\"color: #ff0000;\"><strong>3. No rentis la pasta<\/strong><\/span><strong><span style=\"color: #ff0000;\">.<\/span> <\/strong>Tampoc no hi ha cap ra\u00f3 per plantar la nostra escorredora gegant sota l\u2019aixeta i deixar-hi c\u00f3rrer un raig d\u2019aigua freda al damunt. L\u2019\u00fanic que aconseguirem \u00e9s treure gust als espagueti, <em>fusilli<\/em> o qualsevol altra pasta que tinguem entre mans i, a m\u00e9s, refredar-los. Nom\u00e9s hi ha un cas en qu\u00e8 s\u00ed que podem rentar la pasta: si la intenci\u00f3 \u00e9s menjar-la freda en forma d\u2019amanida i tenim molta pressa, tot i que el m\u00e9s recomanable \u00e9s deixar que es refredi sola perqu\u00e8 no perdi el sabor.<\/p>\n<p><span style=\"color: #ff0000;\"><strong>4. Fins que l\u2019aigua no bulli, no hi posis la sal<\/strong><strong>.<\/strong><\/span> Nom\u00e9s aconseguirem alentir el proc\u00e9s d\u2019ebullici\u00f3 i, per tant, malgastar temps i energia. S\u00ed que cal posar-hi sal, per\u00f2 just quan l\u2019aigua arrenqui el bull. El mateix passa amb la pasta: s\u2019ha de posar quan l\u2019aigua bulli, mai abans.<\/p>\n<p><span style=\"color: #ff0000;\"><strong>5. No la reescalfis<\/strong><strong>. <\/strong><\/span>Si la idea \u00e9s menjar-nos la pasta l\u2019endem\u00e0, \u00e9s recomanable que sigui freda, ja que si la reescalfem perd molt. Aquesta regla serveix per a tota la pasta excepte la que es cuina al forn: canelons i lasanya.<\/p>\n<p><span style=\"color: #ff0000;\"><strong>6. No hi suquis pa<\/strong><strong>.<\/strong><\/span> Cadasc\u00fa \u00e9s lliure de menjar la pasta com vulgui, per\u00f2 el cert \u00e9s que a un bon itali\u00e0 no li passaria mai pel cap de sucar-hi pa, ni tan sol per escurar aquella bolonyesa deliciosa que sembla que irremeiablement es quedar\u00e0 al plat. Alg\u00fa dir\u00e0 que les normes hi s\u00f3n precisament per saltar-se-les, que tampoc cal ser ortodox i que per qu\u00e8 hem de renunciar a finalitzar una bona carbonara amb un tros de pa. I t\u00e9 tota la ra\u00f3, per\u00f2 les normes s\u00f3n les normes.<\/p>\n<p><span style=\"color: #ff0000;\"><strong>7. Combina les pastes i les salses amb sentit<\/strong><strong>. <\/strong><\/span>Les pastes m\u00e9s fines i delicades, com ara els espagueti, van b\u00e9 amb salses de textura m\u00e9s l\u00edquida, menys consistents, que cobreixin completament la pasta. Els cl\u00e0ssics espagueti <em>all\u2019aglio e olio<\/em> i fins i tot la carbonara s\u00f3n bons exemples d\u2019aquest gran maridatge. D\u2019altra banda, les pastes en forma de cinta s\u00f3n perfectes per a salses de textura consistent i sabor fort. Els cl\u00e0ssics <em>fusilli<\/em> o els <em>penne<\/em> constitueixen, per la seva part, la pasta vers\u00e0til per excel\u00b7l\u00e8ncia, que pot funcionar b\u00e9 amb salses de verdures lleugeres i amb d\u2019altres de m\u00e9s potents a base de carn o peix, de manera que s\u00f3n un element b\u00e0sic de qualsevol rebost. Per acabar, les <em>farfalle<\/em>, un tipus de pasta molt vist\u00f3s i tamb\u00e9 for\u00e7a multifuncional, hem de mirar de combinar-les sempre amb salses senzilles. Tamb\u00e9 funcionen molt b\u00e9 amb amanides, fredes, acompanyades de verdures crues al gust i d\u2019una bona vinagreta.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Fer una pasta perfecta no \u00e9s, ni de bon tros, tan senzill com creiem.
