Si en el seu moment van ser els cr\u00f2nuts, el <em>cebiche<\/em>, el <em>sushi <\/em>arc iris (s\u00ed, s\u00ed: <em>sushi<\/em> multicolor) o aquells gin-tonics i hamburgueses que ja queden tan lluny, tot indica que aquesta temporada s\u2019imposaran les seg\u00fcents modes, en qu\u00e8, de ben segur, tots caurem.<\/p>\n<p><strong><span style=\"color: #ff0000;\">1- El caf\u00e8 d\u2019especialitat.<\/span><br \/>\n<\/strong>Adeu, lamentable caf\u00e8 torrefacte que raspes el paladar; hola, caf\u00e8 d\u2019especialitat. Ets car, male\u00eft; per\u00f2 est\u00e0s tan summament bo, ets tan delicat i equilibrat i portes a tal perfecci\u00f3 aquella mescla de dol\u00e7or i amargor, que no ens dol pagar 2\u00a0\u20ac per tu. Vens de Col\u00f2mbia o Nicaragua, o d\u2019altres pa\u00efsos productors de caf\u00e8 que desconeixem, i est\u00e0s decidit a guanya la batalla contra el torrefacte de bar que prenem de tota la vida. Lluitarem al teu costat, camarada.<\/p>\n<p><strong><span style=\"color: #ff0000;\">2- El veganisme.<\/span><br \/>\n<\/strong>Ni carn, ni peix, ni ous, ni lactis, ni mel. Aquesta \u00e9s la b\u00edblia del veganisme, un corrent que irromp amb for\u00e7a i sedueix fins i tot els carn\u00edvors de pro. Hi ha mil motius per fer-se veg\u00e0 o per introduir poc a poc el veganisme en la dieta: a m\u00e9s del respecte pels animal i el medi ambient i l\u2019aposta per un consum responsable, hi ha el fet de seguir una alimentaci\u00f3 molt m\u00e9s conscient i saludable.<\/p>\n<p><strong><span style=\"color: #ff0000;\">3- Raw-food.<\/span><br \/>\n<\/strong>O, dit d\u2019una altra manera, menjar cru. Aquesta moda est\u00e0 molt relacionada amb el veganisme i aposta per consumir els aliments sense cuinar-los, perqu\u00e8 conservin tots els nutrients que perden en passar pels fogons o pel forn. Cada vegada m\u00e9s restaurants ofereixen opcions de <em>raw-food<\/em> i m\u00e9s persones aposten per menjar, sempre que sigui possible, sense necessitat de cuinar.<\/p>\n<p><strong><span style=\"color: #ff0000;\">4- Restaurants monoproducte.<\/span><br \/>\n<\/strong>Ja fa temps que va comen\u00e7ar el boom i, pel que sembla, es consolidar\u00e0 i veurem sorgir m\u00e9s establiments especialitzats en un sol producte. Des de <em>ramen <\/em>a patates, entrepans, pizzes o formatges, els locals d\u2019un sol producte conqueriran les ciutats i tamb\u00e9 els nostres cors.<\/p>\n<p><strong><span style=\"color: #ff0000;\">5- Les alternatives a la llet de vaca.<\/span><br \/>\n<\/strong>Est\u00e0 clar que la llet de vaca ha perdut la batalla davant de les begudes vegetals que s\u2019han apropiat del mercat. I \u00e9s que cada cop hi ha m\u00e9s persones que abandonen els lactis (no tan sols la llet, sin\u00f3 tamb\u00e9 formatges i derivats) per apuntar-se a begudes de nou, civada, soja, arr\u00f2s o altres alternatives que permeten all\u00f2 que fa uns anys semblava inviable: viure sense lactis sense que gaireb\u00e9 no es noti.<\/p>\n<p><strong><span style=\"color: #ff0000;\">6- Les begudes fermentades.<\/span><br \/>\n<\/strong>La <em>kombucha<\/em>, una beguda centen\u00e0ria de sabor \u00e0cid i refrescant, \u00e9s l\u2019exemple m\u00e9s representatiu d\u2019auge de les begudes fermentades que ja trobem als caf\u00e8s de moda. S\u2019elabora a partir de te dol\u00e7 fermentat i \u00e9s una injecci\u00f3 d\u2019uns probi\u00f2tics formidables per a la salut.<\/p>\n<p><strong><span style=\"color: #ff0000;\">7- Les conserves gurmet.<\/span><br \/>\n<\/strong>Primer va arribar la moda del vermut, i ara arriben a les nostres vides, esperem que per quedar-s\u2019hi, conserves de qualitat ideals per als aperitius entre amics, en qu\u00e8 el cos ens demana productes de bona qualitat, lluny de les t\u00edpiques conserves de supermercats.<\/p>\n<p><strong><span style=\"color: #ff0000;\">8- Els fumats.<\/span><br \/>\n<\/strong>Salm\u00f3, truita i peixos en general, per\u00f2 tamb\u00e9 carns, embotits i, en definitiva, qualsevol producte susceptible de fumar-se artesanalment. Cada vegada apareixen m\u00e9s empreses especialitzades en aquests productes que tant triomfen, sobretot a les grans ciutats, i que de ben segur consolidaran la seva pres\u00e8ncia durant aquest 2018.<\/p>\n<p><strong><span style=\"color: #ff0000;\">9- Els c\u00f2ctels sense alcohol.<\/span><br \/>\n<\/strong>I no nom\u00e9s els c\u00f2ctels: tamb\u00e9 els vins i cerveses sense alcohol arrasen amb for\u00e7a entre uns consumidors que aposten por seguir una alimentaci\u00f3 cada cop m\u00e9s saludable. Perqu\u00e8, si hi ha una tend\u00e8ncia que triomfa i es referma a passes de gegant \u00e9s aquesta, precisament: l\u2019aposta d\u2019una bona part de la poblaci\u00f3 per una alimentaci\u00f3 sana.<\/p>\n<p><strong><span style=\"color: #ff0000;\">10- Els insectes?<\/span><br \/>\n<\/strong>Potser no es posaran de moda, per\u00f2 \u00e9s cert que, gr\u00e0cies a la legislaci\u00f3 de nous aliments aprovada per la Uni\u00f3 Europea, els pa\u00efsos de l\u2019eurozona van introduint poc a poc les noves lleis que autoritzen la comercialitzaci\u00f3 d\u2019insectes. A Espanya, aquesta llei va entrar en vigor l\u20191 de gener de 2018, i ja n\u2019hi ha molts que miren d\u2019aconseguir formigues, grills, saltamartins i altres del\u00edcies per incloure-les a les seves receptes.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Cada any ens sorpr\u00e8n amb tend\u00e8ncies gastron\u00f2miques que faran furor entre el personal foodie.
